Vinification: manual harvesting, spontaneous fermentation and rest on the skins for 10 days, malolactic fermentation carried out naturally, maturation 20% in tonneaux and 80% in steel for 10 months and refinement for 9 months in the bottle.

Foretano
An artisanal red wine with great structure

Foretano comes from only Cesanese di Affile grapes grown according to the dictates of biodynamic agriculture .

Following the manual harvest and careful sorting, the bunches are pressed into exhausted tonneaux where spontaneous fermentation takes place. After racking and complete and spontaneous malolactic fermentation, the mass remains to mature in multi-passage tonneaux for a period of approximately 10 months, followed by a further 7 months of refinement in the bottle.

No oenological adjuvant is used throughout the entire winemaking process and the wine is not subjected to any clarification or filtration.
