Soil: Calcareous leached soil rich in skeleton
Vinification: manual harvesting, spontaneous fermentation and rest on the skins for 8 days, malolactic fermentation carried out naturally, maturation in steel for 10 months and refinement for 3 months in the bottle.

Oncia Rossa
a wine made just like it used to be
Oncia Rossa is a wine that comes from pure Cesanese di Affile grapes, grown on soil rich in skeleton: harvested by hand and with obsessive care and attention, the bunches are vinified in a completely natural way, so as not to ruin everything what good has been done in the vineyard.
For this reason, the fermentation is spontaneous and the rest on the skins lasts for at least 8 days, in order to allow the Cesanese grapes to release all their properties.
The wine then matures in second passage tonneaux for 10 months and subsequently rests in the bottle for at least another 3 months.
