Vinification: manual harvesting, spontaneous fermentation and rest on the skins for 8 days, malolactic fermentation carried out naturally, maturation in steel for 10 months and refinement for 3 months in the bottle.

Oncia Rossa
a wine made just like it used to be
Oncia Rossa is a wine made from 100% Cesanese di Affile grapes, grown on rocky soil. Harvested by hand with meticulous care and attention, the grapes are vinified completely naturally, so as not to ruin all the good work done in the vineyard.
Therefore, fermentation is spontaneous, and the wine rests on the skins for at least 8 days, allowing the Cesanese grapes to release all their properties.
The wine then ages in stainless steel for 10 months and then in bottle for at least another 3 months.
